Fish Stock Preparation
Ingredients
- 1 kg (2 lb) fish trimmings
- 1.2 litres (2 pints) water
- 2 leeks, split and chopped
- 200 ml (7 fl oz) dry white wine
- 1 small onion, finely chopped
- 1 bay leaf
- lemon rind
- fennel sprigs
- salt and pepper
- parsley stalks
Method ( makes roughly about 1 litre of fish stock for use. )
- Put all the ingredients, except the wine and salt and pepper, in a large saucepan.
- Bring slowly to the boil ( remember to skim off any surface scum ).
- Add the wine and salt and pepper to taste and simmer gently for 30 minutes.
- Skim the stock once or twice during cooking.
- Strain the stock through clean muslin ( or a fine sieve ).
- Cool quickly and store in the refrigerator until required to be used.
