Home Made Ingredients – Fish Stock

Fish Stock Preparation

Ingredients

  • 1 kg (2 lb) fish trimmings
  • 1.2 litres (2 pints) water
  • 2 leeks, split and chopped
  • 200 ml (7 fl oz) dry white wine
  • 1 small onion, finely chopped
  • 1 bay leaf
  • lemon rind
  • fennel sprigs
  • salt and pepper
  • parsley stalks

Method ( makes roughly about 1 litre of fish stock for use. )

  1. Put all the ingredients, except the wine and salt and pepper, in a large saucepan.
  2. Bring slowly to the boil ( remember to skim off any surface scum ).
  3. Add the wine and salt and pepper to taste and simmer gently for 30 minutes.
  4. Skim the stock once or twice during cooking.
  5. Strain the stock through clean muslin ( or a fine sieve ).
  6. Cool quickly and store in the refrigerator until required to be used.
