<p><em><strong>The Process</strong></em></p>
<ol>
<li>Put all the ingredients, except pasta and 4 sprigs of parsley, into a large saucepan.</li>
<li>Add enough water to come three-quarters of the way up the side of the pan.</li>
<li>Bring to the boil and simmer over a very low heat for about 3 hours.</li>
<li>Top up with more boiling water if the level falls below that of the meat.</li>
<li>Remove the chicken and beef  from the pan.</li>
<li>Strain the consommé through a fine sieve into a bowl.</li>
<li>Leave the soup to stand overnight and when it is completely cold skim all the fat off the surface.</li>
<li>Return the strained consommé to a saucepan, bring to the boil and add the pasta.</li>
<li>Cook for 10-12 minutes until the pasta is just tender.</li>
<li>Finely chop the reserved parsley.</li>
<li>Garnish the consommé with the parsley and serve.</li>
