<li>Cover with cold water and bring to the boil.</li>
<li>Boil vigorously for 10 minutes, lower the heat and simmer the haricot beans for 1X hours and the kidney beans for 1 hour or until tender.</li>
<li>Adding salt towards the end of cooking.</li>
<li>Heat the oil in a large saucepan.</li>
<li>Add the onion and cook gently for about 5 minutes until soft.</li>
<li>Add the garlic, mushrooms, vegetable stock and broad beans and season to taste with salt and pepper.</li>
<li>Simmer for 10 minutes. Stir in the pasta and the drained haricot and red kidney beans and simmer for a further 15 minutes or until the pasta is just tender.</li>

<li> Bring to ie boil, lower the heat and simmer or 5 minutes.</li>
<li> Cool the soup slightly, then purée it in a food processor or liquidizer ltil fairly smooth.</li>
<li> Leave to cool. Stir the  courgettes into the soup; cover chill for 4 hours, or overnight.</li>
<li> Just before serving, place an ice cube in each of 4 chilled soup bowls.</li>
<li> Pour in the soup, add a swirl of „ogurt and garnish with basil leaves.</li>

<p>*To give it a deeper colour and more intense flavour than hothouse tomatoes, choose dark red, sun-ripened tomatoes, such as Italian plum tomatoes.</p>
